- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a boil.
- Add cooked chicken and orzo pasta. Reduce heat and simmer for 10-12 minutes, or until pasta is tender.
- Stir in fresh lemon juice and chopped parsley.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
For a richer flavor, you can use homemade chicken broth. You can also add other vegetables like carrots or celery along with the onion.
