Lemon Chicken Soup

Ingredients
  

  • 1 tablespoon Olive oil
  • 1 pound Boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 medium Onion chopped
  • 2 Carrots chopped
  • 2 Celery stalks chopped
  • 6 cups Chicken broth
  • 1/2 cup Orzo pasta
  • 1/4 cup Fresh lemon juice
  • 2 tablespoons Fresh parsley chopped
  • Salt To taste
  • Black pepper To taste

Equipment

  • Large pot
  • Cutting board
  • Knife
  • Ladle

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides.
  2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Pour in chicken broth and bring to a boil. Add orzo pasta.
  4. Reduce heat and simmer for 10-12 minutes, or until pasta is cooked through and chicken is cooked through.
  5. Stir in fresh lemon juice and chopped parsley. Season with salt and pepper to taste.
  6. Serve hot.

Notes

For a creamier soup, you can add a splash of heavy cream or milk at the end.
