- Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides.
- Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Pour in chicken broth and bring to a boil. Add orzo pasta.
- Reduce heat and simmer for 10-12 minutes, or until pasta is cooked through and chicken is cooked through.
- Stir in fresh lemon juice and chopped parsley. Season with salt and pepper to taste.
- Serve hot.
Notes
For a creamier soup, you can add a splash of heavy cream or milk at the end.
