Method
- Wash the spinach thoroughly.
- Bring a pot of water to a boil. Add the spinach and blanch for 1-2 minutes, until just wilted.
- Drain the spinach in a colander and rinse with cold water to stop the cooking process. Squeeze out as much excess water as possible.
- In a bowl, combine the squeezed spinach with minced garlic, sesame oil, soy sauce, and toasted sesame seeds.
- Gently toss to combine. Taste and add salt if needed.
- Serve immediately as a side dish.
Notes
You can adjust the amount of soy sauce and sesame oil to your preference. For a spicier version, add a pinch of red pepper flakes.
