Method
- Preheat your oven to 400°F (200°C).
- Pat the pork tenderloin dry with paper towels. Rub it with olive oil, salt, and pepper.
- Place the pork tenderloin on a baking sheet.
- In a small saucepan, combine the apricot preserves, chopped jalapenos with their juice, soy sauce, and minced garlic.
- Cook over medium heat, stirring occasionally, until the preserves are melted and the mixture is smooth. This should take about 5 minutes.
- Brush about half of the glaze over the pork tenderloin.
- Roast the pork tenderloin for 20 minutes.
- Remove the pork from the oven and brush with the remaining glaze. Return to the oven and roast for another 5 minutes, or until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 5-10 minutes before slicing and serving.
Notes
You can adjust the amount of jalapenos to control the spice level. Serve with your favorite side dishes.
