Jalapeno Glazed Pork Tenderloin

Ingredients
  

For the Pork
  • 1 pound pork tenderloin trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze
  • 1/2 cup apricot preserves
  • 2 tablespoons chopped pickled jalapenos with juice
  • 1 tablespoon soy sauce
  • 1 clove garlic minced

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels. Rub it with olive oil, salt, and pepper.
  3. Place the pork tenderloin on a baking sheet.
  4. In a small saucepan, combine the apricot preserves, chopped jalapenos with their juice, soy sauce, and minced garlic.
  5. Cook over medium heat, stirring occasionally, until the preserves are melted and the mixture is smooth. This should take about 5 minutes.
  6. Brush about half of the glaze over the pork tenderloin.
  7. Roast the pork tenderloin for 20 minutes.
  8. Remove the pork from the oven and brush with the remaining glaze. Return to the oven and roast for another 5 minutes, or until the internal temperature reaches 145°F (63°C).
  9. Let the pork rest for 5-10 minutes before slicing and serving.

Notes

You can adjust the amount of jalapenos to control the spice level. Serve with your favorite side dishes.
