Italian Pasta Salad

A classic Italian pasta salad with a zesty dressing.

Ingredients
  

For the Salad
  • 16 oz Rotini pasta cooked and drained
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion finely chopped
  • 1/2 cup Black olives sliced
  • 1/4 cup Parmesan cheese shredded
For the Dressing
  • 1/2 cup Olive oil
  • 1/4 cup Red wine vinegar
  • 2 tbsp Italian seasoning
  • 1 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Equipment

  • Large pot
  • Colander
  • Large mixing bowl
  • Small bowl
  • Whisk

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and Parmesan cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

You can add other ingredients like bell peppers, pepperoni, or mozzarella cheese.
