Honey Glazed Carrots

This recipe provides simple honey-glazed carrots that pair well with main courses like prime rib.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 2 Tbsp honey
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 pound medium-size carrots halved crosswise and lengthwise
  • 1/4 tsp black pepper
  • 1/2 tsp fresh thyme leaves optional

Method
 

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add the carrots to the skillet. Cook for about 5 minutes, stirring occasionally, until they begin to soften.
  3. Stir in the honey, kosher salt, and 1/4 tsp of black pepper.
  4. Continue cooking for another 10 to 15 minutes, stirring often, until the carrots are tender and coated with the glaze. Add the thyme, if using, during the last 2 minutes of cooking.
  5. Taste and add the remaining 1/4 tsp of black pepper if desired. Serve hot.

Notes

These carrots are a good side dish for rich meats like prime rib or steak.
