Honey Garlic Shrimp Bowls

Ingredients
  

For the Shrimp
  • 1 lb Shrimp Peeled and deveined
  • 1 tbsp Olive oil
For the Sauce
  • 1/4 cup Honey
  • 3 tbsp Soy sauce
  • 2 cloves Garlic Minced
  • 1 tsp Ginger Grated
  • 1 tbsp Cornstarch Mixed with 2 tbsp water
For Serving
  • 4 cups Cooked rice
  • 2 cups Steamed broccoli florets
  • 1/2 cup Sliced carrots
  • 2 tbsp Sesame seeds Toasted, for garnish
  • 2 tbsp Chopped green onions For garnish

Method
 

  1. In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Pour the honey garlic sauce into the same skillet. Bring to a simmer. Stir in the cornstarch slurry and cook for 1-2 minutes, until the sauce thickens.
  4. Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for another minute until heated through.
  5. To assemble the bowls, divide the cooked rice among four bowls. Top with steamed broccoli and sliced carrots.
  6. Spoon the honey garlic shrimp over the vegetables and rice. Garnish with toasted sesame seeds and chopped green onions.

Notes

For a spicier kick, add a pinch of red pepper flakes to the sauce. You can also add other vegetables like bell peppers or snap peas.
