- In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Pour the honey garlic sauce into the same skillet. Bring to a simmer. Stir in the cornstarch slurry and cook for 1-2 minutes, until the sauce thickens.
- Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for another minute until heated through.
- To assemble the bowls, divide the cooked rice among four bowls. Top with steamed broccoli and sliced carrots.
- Spoon the honey garlic shrimp over the vegetables and rice. Garnish with toasted sesame seeds and chopped green onions.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce. You can also add other vegetables like bell peppers or snap peas.
