- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the carrots with olive oil, honey, minced garlic, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
- Serve immediately.
Notes
For extra flavor, you can add a pinch of red pepper flakes to the glaze. You can also garnish with fresh parsley before serving.
