Honey Garlic Roasted Carrots

Ingredients
  

For the Carrots
  • 1 lb carrots peeled and cut into 1-inch pieces
  • 2 tbsp olive oil
For the Glaze
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 clove garlic minced
  • 1/4 tsp black pepper

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the prepared carrots with olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes.
  5. While the carrots are roasting, whisk together the honey, soy sauce, minced garlic, and black pepper in a small bowl to make the glaze.
  6. After 20 minutes, remove the carrots from the oven and drizzle the honey garlic glaze over them. Toss to coat.
  7. Return the carrots to the oven and roast for another 5-10 minutes, or until tender and slightly caramelized.
  8. Let cool for 5 minutes before serving.

Notes

You can add a pinch of red pepper flakes to the glaze for a little heat. Garnish with sesame seeds or chopped parsley if desired.
