Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the prepared carrots with olive oil, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast for 20 minutes.
- While the carrots are roasting, whisk together the honey, soy sauce, minced garlic, and black pepper in a small bowl to make the glaze.
- After 20 minutes, remove the carrots from the oven and drizzle the honey garlic glaze over them. Toss to coat.
- Return the carrots to the oven and roast for another 5-10 minutes, or until tender and slightly caramelized.
- Let cool for 5 minutes before serving.
Notes
You can add a pinch of red pepper flakes to the glaze for a little heat. Garnish with sesame seeds or chopped parsley if desired.
