Honey Feta Sweet Potato Rounds

These sweet potato rounds are topped with honey and feta for a simple and delicious appetizer.

Ingredients
  

For the Sweet Potato Rounds
  • 2 medium sweet potatoes about 8 ounces each
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Topping
  • 4 ounces feta cheese crumbled
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves optional

Equipment

  • Baking sheet
  • Knife
  • Cutting board

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes. Slice them into 1/2-inch thick rounds.
  3. Place the sweet potato rounds on a baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper.
  4. Bake for 20-25 minutes, or until tender and slightly browned.
  5. Remove the baking sheet from the oven. Top each sweet potato round with crumbled feta cheese.
  6. Drizzle honey over the feta cheese.
  7. If using, sprinkle with fresh thyme leaves.
  8. Return to the oven for 2-3 minutes, or until the feta is slightly softened.
  9. Serve warm.

Notes

You can substitute goat cheese for feta if desired.
