Honey Chipotle Chicken Bowl

Ingredients
  

For the Chicken
  • 1.5 lbs Chicken breast cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Honey Chipotle Sauce
  • 1/4 cup Honey
  • 2 tbsp Adobo sauce from canned chipotle peppers
  • 1 tbsp Soy sauce
  • 1 tsp Garlic powder
  • 1/2 tsp Smoked paprika
For Serving
  • 4 cups Cooked rice or quinoa
  • 1 cup Black beans rinsed and drained
  • 1 cup Corn fresh or frozen
  • 1/2 cup Cilantro chopped, for garnish
  • 1/4 cup Lime wedges for serving

Method
 

  1. In a medium bowl, whisk together honey, adobo sauce, soy sauce, garlic powder, and smoked paprika. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Pour the honey chipotle sauce over the chicken in the skillet. Stir to coat and cook for another 2-3 minutes, until the sauce has thickened slightly.
  4. Assemble the bowls: Divide cooked rice or quinoa among four bowls. Top with the honey chipotle chicken, black beans, and corn.
  5. Garnish with fresh cilantro and serve with lime wedges.

Notes

For extra heat, add a pinch of cayenne pepper to the sauce. You can also add other toppings like avocado, shredded lettuce, or a dollop of sour cream.
