- In a medium bowl, whisk together honey, adobo sauce, soy sauce, garlic powder, and smoked paprika. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Pour the honey chipotle sauce over the chicken in the skillet. Stir to coat and cook for another 2-3 minutes, until the sauce has thickened slightly.
- Assemble the bowls: Divide cooked rice or quinoa among four bowls. Top with the honey chipotle chicken, black beans, and corn.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
For extra heat, add a pinch of cayenne pepper to the sauce. You can also add other toppings like avocado, shredded lettuce, or a dollop of sour cream.
