  • 1/2 cup Granulated sugar
  • 1/4 cup Brown sugar packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt

Equipment

  • Baking sheet
  • Parchment paper
  • Mixing bowls
  • Electric mixer

Method

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the peanut butter and softened butter until smooth.
  3. Add the granulated sugar and brown sugar to the bowl. Beat until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Use a fork to gently press down on each cookie and create the Nutter Butter shape. You can also press lightly to flatten them slightly.
  9. Bake for 9-11 minutes, or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
