Method
- Season the steak pieces with salt and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Add the steak to the skillet and cook for 2-3 minutes per side, or until cooked to your desired doneness.
- Remove steak from skillet and set aside.
- In a small bowl, whisk together the dressing ingredients: 2 tablespoons olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
- Assemble the bowls: Divide the cooked quinoa between two bowls.
- Top the quinoa with romaine lettuce, cherry tomatoes, cucumber, red onion, and avocado.
- Add the cooked steak to each bowl.
- Drizzle the dressing over the bowls and serve immediately.
Notes
You can substitute the quinoa with brown rice or your favorite grain. Feel free to add other vegetables like bell peppers or corn.
