Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning
For the Bowls
  • 4 cups cooked quinoa or brown rice
  • 1 can black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro

Equipment

  • Cutting board

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken pieces to the skillet and season with taco seasoning. Cook until browned and cooked through, about 5-7 minutes.
  3. Divide the cooked quinoa or brown rice among four bowls.
  4. Top each bowl with the seasoned chicken, black beans, corn, tomatoes, and red onion.
  5. Garnish with cilantro and serve with lime wedges.

Notes

You can customize your bowls with your favorite toppings like avocado, salsa, or Greek yogurt.
