Ingredients
  

For the Chicken and Sweet Potatoes
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 medium sweet potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the chicken pieces and sweet potato cubes.
  3. Add the olive oil, paprika, garlic powder, salt, and pepper to the bowl. Toss to coat the chicken and sweet potatoes evenly.
  4. Spread the mixture in a single layer on the prepared baking sheet.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender, flipping halfway through.
  6. Serve hot.

Notes

You can add other vegetables like broccoli or bell peppers to the baking sheet. Adjust cooking time as needed based on the size of your vegetable pieces.
