- Preheat your oven to 400°F (200°C).
- In a bowl, toss the diced sweet potato with olive oil, chili powder, cumin, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast for 15-20 minutes, or until tender and slightly browned.
- While the sweet potatoes are roasting, cook your eggs. You can scramble them, fry them, or poach them according to your preference.
- Assemble the bowls: Divide the cooked quinoa between two bowls. Top with black beans, corn, diced red onion, diced bell pepper, and sliced avocado.
- Add the cooked sweet potatoes and your prepared eggs to each bowl.
- Serve immediately.
