Ingredients
  

Pancakes
  • 2 ripe bananas mashed
  • 1 cup rolled oats can use quick oats if preferred
  • 2 large eggs
  • 1/2 cup milk dairy or non-dairy
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup optional, for extra sweetness
  • 1 tbsp vegetable oil for cooking

Method
 

  1. In a blender, combine the mashed bananas, rolled oats, eggs, milk, baking powder, cinnamon, and optional maple syrup. Blend until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  4. Serve warm with your favorite toppings.

Notes

You can add toppings like fresh fruit, yogurt, or a drizzle of honey. For a thicker batter, use less milk. For thinner pancakes, add a splash more milk.
