Hawaiian Chicken Pineapple Kebabs

Ingredients
  

For the Marinade
  • 1/2 cup Soy Sauce
  • 1/4 cup Pineapple Juice
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Sesame Oil
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger grated
For the Kebabs
  • 1.5 pounds Chicken Breast cut into 1-inch cubes
  • 1 cup Fresh Pineapple Chunks

  • Mixing bowl

Method
 

  1. In a mixing bowl, whisk together soy sauce, pineapple juice, brown sugar, sesame oil, minced garlic, and grated ginger. This is your marinade.
  2. Add the chicken cubes to the marinade. Toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. While the chicken marinates, soak wooden skewers in water for at least 30 minutes to prevent burning. If using metal skewers, this step is not necessary.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken cubes, pineapple chunks, bell pepper pieces, and red onion pieces onto the skewers, alternating the ingredients.
  6. Place the skewers on the preheated grill. Grill for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
  7. Remove the kebabs from the grill and let them rest for a few minutes before serving.

Notes

Serve these kebabs with rice or a side salad for a complete meal. You can also brush any leftover marinade on the kebabs during the last few minutes of grilling, ensuring it has boiled first.
