- In a mixing bowl, whisk together soy sauce, pineapple juice, brown sugar, sesame oil, minced garlic, and grated ginger. This is your marinade.
- Add the chicken cubes to the marinade. Toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
- While the chicken marinates, soak wooden skewers in water for at least 30 minutes to prevent burning. If using metal skewers, this step is not necessary.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken cubes, pineapple chunks, bell pepper pieces, and red onion pieces onto the skewers, alternating the ingredients.
- Place the skewers on the preheated grill. Grill for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
Notes
Serve these kebabs with rice or a side salad for a complete meal. You can also brush any leftover marinade on the kebabs during the last few minutes of grilling, ensuring it has boiled first.
