- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced sweet potatoes, salt, and pepper. Stir to combine.
- Pour in chicken broth, bring to a simmer, then cover and reduce heat to low. Cook for 15-20 minutes, or until sweet potatoes are tender.
- Serve hot.
Notes
You can add other vegetables like bell peppers or spinach. Adjust seasonings to your preference.
