Ground Chicken & Broccoli Bowls

Ingredients
  

For the Bowls
  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes optional
For Serving
  • 4 cooked rice or quinoa
  • sesame seeds for garnish
  • sliced green onions for garnish

Equipment

  • Large skillet
  • Cutting board

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the broccoli florets, soy sauce, honey, sesame oil, and red pepper flakes (if using). Cook, stirring occasionally, until the broccoli is tender-crisp, about 5-7 minutes.
  4. Divide the cooked rice or quinoa among four bowls. Spoon the ground chicken and broccoli mixture over the rice.
  5. Garnish with sesame seeds and sliced green onions, if desired.

Notes

You can substitute ground turkey or ground beef for the chicken. Adjust the amount of red pepper flakes to your spice preference.
