Green Bean and Feta Salad

A refreshing salad with crisp green beans and salty feta cheese.

Ingredients
  

For the Salad
  • 1 pound fresh green beans trimmed
  • 4 ounces feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • Salt to taste salt
  • Black pepper to taste black pepper

Method
 

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-5 minutes, until crisp-tender. Drain immediately and rinse under cold water to stop the cooking process. Drain well.
  2. In a large bowl, combine the blanched green beans, crumbled feta cheese, sliced red onion, and chopped parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.
  4. Pour the dressing over the green bean mixture and toss gently to combine. Serve immediately or chill for later.

Notes

You can add other vegetables like cherry tomatoes or bell peppers to this salad. For a heartier meal, consider adding grilled chicken or chickpeas.
