Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, red onion, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix gently until just combined.
  3. Add the egg and breadcrumbs to the bowl. Mix again until all ingredients are incorporated. Be careful not to overmix.
  4. Roll the mixture into small meatballs, about 1.5 inches in diameter. You should get about 16-20 meatballs.
  5. Place the meatballs on the prepared baking sheet, ensuring they are not touching each other.
  6. Bake for 18-20 minutes, or until the meatballs are cooked through and lightly browned.
  7. Serve hot.

Notes

These meatballs are delicious served with a side of tzatziki sauce, a Greek salad, or over rice or quinoa.
