Ginger Lime Pork with Coconut

Ingredients
  

For the Pork
  • 1.5 lbs Pork tenderloin cut into 1-inch pieces
  • 1 tbsp Coconut oil
For the Sauce
  • 1 can Full-fat coconut milk 13.5 oz
  • 1/4 cup Lime juice freshly squeezed
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 1 inch Ginger grated
  • 2 cloves Garlic minced
For Garnish
  • 1/4 cup Fresh cilantro chopped

Equipment

  • Large skillet
  • Cutting board
  • Knife

Method
 

  1. Heat coconut oil in a large skillet over medium-high heat.
  2. Add pork pieces to the skillet and cook until browned on all sides. Remove pork from skillet and set aside.
  3. In the same skillet, combine coconut milk, lime juice, soy sauce, honey, grated ginger, and minced garlic. Stir well.
  4. Bring the sauce to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
  5. Return the pork to the skillet and toss to coat in the sauce. Cook for another 5-7 minutes, or until the pork is cooked through and the sauce has coated the pieces.
  6. Serve the ginger lime pork with coconut, garnished with fresh cilantro and lime wedges.

Notes

This dish pairs well with steamed rice or quinoa.
