Method
- Heat coconut oil in a large skillet over medium-high heat.
- Add pork pieces to the skillet and cook until browned on all sides. Remove pork from skillet and set aside.
- In the same skillet, combine coconut milk, lime juice, soy sauce, honey, grated ginger, and minced garlic. Stir well.
- Bring the sauce to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
- Return the pork to the skillet and toss to coat in the sauce. Cook for another 5-7 minutes, or until the pork is cooked through and the sauce has coated the pieces.
- Serve the ginger lime pork with coconut, garnished with fresh cilantro and lime wedges.

This dish pairs well with steamed rice or quinoa.
