Garlic Sauce Baby Potatoes

A simple and flavorful recipe for roasted baby potatoes coated in a rich garlic sauce.

Ingredients
  

  • 1 kg baby potatoes halved or quartered if large
  • 4 cloves garlic minced
  • 4 tbsp olive oil
  • 2 tbsp butter melted
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the baby potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping halfway through.
  5. Remove from the oven and drizzle with melted butter. Toss to coat.
  6. Sprinkle with fresh chopped parsley before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the potatoes before roasting.
