- Preheat your oven to 200°C (400°F).
- In a large bowl, toss the baby potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping halfway through.
- Remove from the oven and drizzle with melted butter. Toss to coat.
- Sprinkle with fresh chopped parsley before serving.
