Garlic Parmesan Sweet Potato

Ingredients
  

For the Sweet Potatoes
  • 2 pounds sweet potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Roast for 20 minutes.
  5. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the sweet potatoes.
  6. Return the baking sheet to the oven and roast for another 10-15 minutes, or until the sweet potatoes are tender and the cheese is melted and lightly browned.
  7. Garnish with fresh chopped parsley before serving.

Notes

You can adjust the amount of garlic and Parmesan to your preference. Ensure the sweet potatoes are in a single layer on the baking sheet for even roasting.
