Garlic Parmesan Chicken Skewers

Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
For the Marinade
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

  • Mixing bowl

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a mixing bowl, combine olive oil, minced garlic, grated Parmesan cheese, oregano, salt, and pepper. Whisk together to create the marinade.
  3. Add the chicken pieces to the bowl with the marinade. Toss to coat the chicken evenly.
  4. Thread the marinated chicken pieces onto the prepared skewers.
  5. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  6. Grill the skewers for 5-6 minutes per side, or until the chicken is cooked through and has nice grill marks. If baking, place skewers on a baking sheet and bake for 12-15 minutes, flipping halfway through, until chicken is cooked through.
  7. Remove skewers from the heat. Garnish with fresh chopped parsley before serving.

Notes

Serve these skewers with a side salad or your favorite dipping sauce. You can also add vegetables like bell peppers or onions to the skewers before grilling.
