Garlic Parmesan Chicken and Potatoes (One-Pan Dinner)

Ingredients
  

Potatoes
  • 1 lb chicken breasts cut into cubes
  • 4 small/medium-sized russet potatoes
  • 1 tbsp olive oil for potatoes
  • to taste salt for potatoes
  • to taste pepper for potatoes
  • to taste garlic powder for potatoes
  • to taste paprika for potatoes
Chicken Seasoning and Sauce
  • 2 tbsp butter
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 tbsp minced garlic adjust to preference
  • as needed Buffalo Wild Wings Garlic Parmesan Sauce to coat chicken
  • 1 cup shredded mozzarella cheese
  • to taste dried parsley for topping

Equipment

  • Air fryer
  • Skillet
  • Oven

Method
 

  1. Wash the potatoes, peel them, and cut them into small cubes.
  2. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika. Mix until the potatoes are well coated in oil and seasoning.
  3. Cook the potatoes in the air fryer at 400 degrees F for about 25 minutes. Shake the potatoes a couple of times during cooking.
  4. When the potatoes are about halfway done cooking, cut the chicken into cubes.
  5. Cook the cubed chicken in a skillet on medium-high heat using 2 tablespoons of butter.
  6. Season the chicken with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  7. When the chicken finishes cooking, add the minced garlic and the Garlic Parmesan sauce. Use enough sauce to coat the chicken.
  8. Add the cooked potatoes to the skillet and stir everything together well.
  9. Top the mixture with shredded mozzarella cheese.
  10. Broil the dish in the oven for a few minutes until the cheese melts. Alternatively, cover the skillet with a lid and let it sit on the stove until the cheese melts. Top with dried parsley and more Garlic Parmesan sauce if desired.
