Garlic Mushroom Chicken Casserole

Ingredients
  

For the Casserole
  • 1.5 lbs chicken breast cut into bite-sized pieces
  • 8 oz mushrooms sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can cream of mushroom soup 10.5 oz
  • 0.5 cup milk
  • 0.5 cup shredded cheddar cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
Optional Topping
  • 0.5 cup bread crumbs
  • 2 tbsp butter melted

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. In a large skillet, cook the chicken pieces over medium-high heat until browned. Remove chicken from skillet and set aside.
  3. Add the mushrooms and onion to the same skillet. Cook until softened, about 5-7 minutes.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Add the cream of mushroom soup and milk to the skillet. Stir to combine.
  6. Return the browned chicken to the skillet. Season with salt and pepper.
  7. Pour the mixture into the prepared baking dish. Sprinkle with shredded cheddar cheese.
  8. In a small bowl, combine the bread crumbs and melted butter. Sprinkle over the cheese.
  9. Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
