- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the cubed potatoes, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss to coat the potatoes evenly.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Roast for 35-40 minutes, or until the potatoes are tender and golden brown, flipping them halfway through the cooking time.
- Serve hot.
Notes
For extra crispy potatoes, you can soak the cut potatoes in cold water for 30 minutes before drying them thoroughly and proceeding with the recipe.
