Ingredients

For the Banana Base
  • 3 ripe bananas frozen
For the Peanut Butter Filling
  • 1/2 cup peanut butter creamy
  • 2 tablespoons maple syrup or other liquid sweetener
For the Chocolate Coating
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 tablespoon coconut oil optional, for smoother coating
  • 1/4 cup peanuts roasted and salted, chopped

Equipment

  • Baking sheet
  • Parchment paper
  • Blender or food processor

Method

  1. Line a baking sheet with parchment paper.
  2. Slice the frozen bananas into 1/2-inch thick rounds.
  3. Arrange the banana slices in a single layer on the prepared baking sheet.
  4. In a small bowl, mix together the peanut butter and maple syrup until smooth.
  5. Spoon a small amount of the peanut butter mixture onto half of the banana slices. Top with the remaining banana slices to create sandwiches.
  6. Place the banana sandwiches back on the baking sheet and freeze for at least 2 hours, or until firm.
  7. Melt the dark chocolate chips with the coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring in between, or over a double boiler until smooth.
  8. Dip each frozen banana sandwich into the melted chocolate, ensuring it is fully coated. Sprinkle with chopped peanuts immediately after coating.
  9. Place the coated banana snickers back on the parchment-lined baking sheet.
  10. Freeze for at least another 30 minutes, or until the chocolate is set.
  11. Serve immediately or store in an airtight container in the freezer.

Notes

For a different flavor, you can add a pinch of salt to the peanut butter mixture. You can also use different types of nuts for topping.
