Method
- Line a baking sheet with parchment paper.
- Slice the frozen bananas into 1/2-inch thick rounds.
- Arrange the banana slices in a single layer on the prepared baking sheet.
- In a small bowl, mix together the peanut butter and maple syrup until smooth.
- Spoon a small amount of the peanut butter mixture onto half of the banana slices. Top with the remaining banana slices to create sandwiches.
- Place the banana sandwiches back on the baking sheet and freeze for at least 2 hours, or until firm.
- Melt the dark chocolate chips with the coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring in between, or over a double boiler until smooth.
- Dip each frozen banana sandwich into the melted chocolate, ensuring it is fully coated. Sprinkle with chopped peanuts immediately after coating.
- Place the coated banana snickers back on the parchment-lined baking sheet.
- Freeze for at least another 30 minutes, or until the chocolate is set.
- Serve immediately or store in an airtight container in the freezer.
Notes
For a different flavor, you can add a pinch of salt to the peanut butter mixture. You can also use different types of nuts for topping.
