Fresh Cucumber & Feta Salad

Ingredients
  

For the Salad
  • 2 large cucumbers peeled, seeded, and chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the chopped cucumbers, crumbled feta cheese, sliced red onion, and chopped mint leaves.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients and toss gently to coat.
  4. Serve immediately or chill for later.

Notes

You can add other vegetables like bell peppers or tomatoes if desired. For a spicier kick, add a pinch of red pepper flakes to the dressing.
