French Salted Butter Cookies

Ingredients
  

For the Cookies
  • 225 g Salted butter softened
  • 100 g Granulated sugar
  • 1 Large egg yolk
  • 1 tsp Vanilla extract
  • 250 g All-purpose flour
  • 1/4 tsp Salt if using unsalted butter

Method
 

  1. Cream the softened salted butter and granulated sugar together in a mixing bowl until light and fluffy.
  2. Beat in the egg yolk and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour and salt (if using unsalted butter).
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheet, spacing them about 1 inch apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Store cooled cookies in an airtight container at room temperature.
