Ingredients

For the Cake
  • 150 g unsalted butter melted
  • 150 g granulated sugar
  • 3 large eggs
  • 75 g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
For the Apples
  • 1.5 kg apples such as Gala or Fuji, peeled, cored, and thinly sliced
  • 2 tbsp lemon juice
  • 1 tsp cinnamon

Equipment

  • Mandoline slicer
  • 9-inch cake pan
  • Mixing bowl

Method

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. In a mixing bowl, whisk together the melted butter and granulated sugar. Beat in the eggs one at a time until well combined.
  3. In a separate small bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. In a large bowl, toss the thinly sliced apples with lemon juice and cinnamon.
  5. Gently fold about half of the apple slices into the cake batter. Pour the batter into the prepared cake pan.
  6. Arrange the remaining apple slices on top of the batter in a decorative pattern.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  8. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
