Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 tablespoon sweetener e.g., maple syrup, honey, or sugar substitute, optional
  • 1 tablespoon oil or butter for cooking

Method
 

  1. Combine cottage cheese, eggs, vanilla extract, baking powder, and optional sweetener in a blender. Blend until smooth.
  2. Heat oil or butter in a griddle or frying pan over medium heat.
  3. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve immediately with your favorite toppings.

Notes

You can add berries or chocolate chips to the batter before cooking. These pancakes are best served fresh.
