- Preheat your oven to 350ºF. Spray an 8x8 inch baking pan with cooking spray.
- In a bowl, mix the dry Jiffy mix, drained corn, creamed corn, sour cream, and melted butter together.
- Pour the mixture into the prepared baking dish.
- Cook uncovered for 45 to 50 minutes, or until lightly golden brown.
- Add salt and black pepper to taste. Garnish with fresh parsley or sliced green onion if you want.
Notes
You can mix in 2 eggs for a slightly lighter corn casserole. Add 1/2 to 1 cup shredded cheddar cheese if you prefer more cheese. Adding 1/4 cup to 1/2 cup sugar will make this a sweet corn casserole, similar to a corn cake. Frozen sweet corn kernels can replace the canned corn; use about 12 ounces.
