Ingredients
  

Corn Casserole
  • 1 box Jiffy Corn Muffin mix 8 ounces, dry mix only
  • 15 ounces Whole kernel corn drained
  • 15 ounces Creamed corn not drained
  • 1 cup Sour cream room temperature is best
  • 1/2 cup Melted butter
  • To taste Salt and black pepper

Method
 

  1. Preheat your oven to 350ºF. Spray an 8x8 inch baking pan with cooking spray.
  2. In a bowl, mix the dry Jiffy mix, drained corn, creamed corn, sour cream, and melted butter together.
  3. Pour the mixture into the prepared baking dish.
  4. Cook uncovered for 45 to 50 minutes, or until lightly golden brown.
  5. Add salt and black pepper to taste. Garnish with fresh parsley or sliced green onion if you want.

Notes

You can mix in 2 eggs for a slightly lighter corn casserole. Add 1/2 to 1 cup shredded cheddar cheese if you prefer more cheese. Adding 1/4 cup to 1/2 cup sugar will make this a sweet corn casserole, similar to a corn cake. Frozen sweet corn kernels can replace the canned corn; use about 12 ounces.
