- In a large pot, combine chicken broth, soy sauce, sesame oil, sriracha, minced garlic, and grated ginger. Bring to a simmer over medium heat.
- While the broth simmers, cook the ramen noodles according to package directions. Drain well.
- Prepare the soft-boiled eggs. Peel and halve them.
- Divide the cooked ramen noodles between two bowls.
- Ladle the hot broth over the noodles.
- Top each bowl with shredded chicken, halved soft-boiled eggs, sliced scallions, and nori strips.
- Serve immediately.
Notes
Adjust sriracha for your desired level of heat. You can add other toppings like corn, bamboo shoots, or bean sprouts.
