Ingredients

  • 1 cup red lentils rinsed and soaked for at least 2 hours, or overnight
  • 1/2 cup water or as needed for batter consistency
  • 1/4 cup oat flour or almond flour for gluten-free
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp oil for cooking
Optional additions
  • 1 tbsp maple syrup or other sweetener
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom

Method
 

  1. Drain the soaked red lentils thoroughly.
  2. In a blender, combine the drained lentils, water, oat flour, baking powder, and salt. Blend until you have a smooth batter. Add more water if needed to reach your desired pancake batter consistency.
  3. If using, stir in optional sweeteners or spices.
  4. Heat a lightly oiled non-stick skillet over medium heat.
  5. Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve warm with your favorite toppings.
