Easy Garlic Parmesan Chicken and Potatoes

This recipe provides instructions for making chicken and potatoes coated in a creamy Parmesan garlic sauce.

Ingredients
  

  • 2 pounds potatoes cut into 1 1/2- to 2-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken diced into 1 1/2-inch pieces
  • 1 cup creamy Parmesan garlic sauce such as Buffalo Wild Wings Parmesan Garlic Sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese optional
  • 1 tablespoon chopped fresh parsley or to taste (optional)

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large baking dish.
  2. In a large bowl, toss the potatoes with olive oil, kosher salt, black pepper, and paprika until they are evenly coated.
  3. Spread the seasoned potatoes in a single layer in the prepared baking dish.
  4. Bake the potatoes for 15 minutes.
  5. While the potatoes bake, place the diced chicken in the same bowl you used for the potatoes.
  6. Pour the Parmesan garlic sauce and water or chicken stock over the chicken. Toss to coat the chicken pieces.
  7. After the potatoes have baked for 15 minutes, remove the dish from the oven. Add the sauced chicken mixture to the baking dish, spreading it around the potatoes.
  8. Return the dish to the oven and bake for another 15 minutes, or until the chicken is cooked through and the potatoes are tender.
  9. Remove the dish from the oven. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese (if using) over the top.
  10. Bake for 5 more minutes, or until the cheese is melted and bubbly.
  11. Garnish with fresh parsley before serving.

Notes

You can use any creamy Parmesan garlic sauce you prefer. If your sauce is very thick, you may need to add a little more liquid to the chicken mixture to help it coat evenly.
