Easy Crockpot Honey Garlic Chicken Thighs

Ingredients
  

  • 2.5 lbs boneless, skinless chicken thighs or substitute with chicken breasts
  • 1 Salt and black pepper to taste
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 6 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional

  • 1 Sliced green onions
  • 1 Chopped peanuts
  • 1 Chopped parsley or cilantro
  • 1 Extra red pepper flakes or sriracha for serving

Method
 

  1. Season the chicken thighs lightly with salt and black pepper. Place the seasoned chicken thighs into the insert of your slow cooker.
  2. In a small bowl, mix the honey, soy sauce, minced garlic, and optional red pepper flakes. Pour this sauce mixture over the chicken thighs in the slow cooker.
  3. Cover the slow cooker. Cook on low for 5 to 6 hours, or on high for 2.5 to 3 hours.
  4. Remove the cooked chicken thighs from the slow cooker. Cut the chicken into chunks or shred it using two forks.
  5. Mix the cut or shredded chicken back into the sauce remaining in the slow cooker. Let it sit for at least 5 to 10 minutes so the chicken absorbs the juices.
  6. Serve the chicken hot, adding any desired toppings before eating.

Notes

For best results, use chicken thighs as they stay moister than breasts in the slow cooker. If you use chicken breasts, reduce the cooking time slightly.
