Easter Swirl Pie

Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons melted butter
Filling
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces sour cream
  • 1/4 cup milk
  • 1 teaspoon lemon zest
  • 1 drop pink food coloring or desired color
  • 1 drop yellow food coloring or desired color

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Mix the graham cracker crumbs and 1/4 cup sugar. Add the melted butter and press the mixture into the bottom and up the sides of a 9-inch pie plate.
  2. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  3. Beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and the vanilla extract, mixing well.
  4. Beat in the eggs one at a time. Mix in the sour cream, milk, and lemon zest until just combined.
  5. Divide the filling mixture evenly into two separate bowls. Add the pink food coloring to one bowl and the yellow food coloring to the other. Mix each until the color is uniform.
  6. Spoon alternating dollops of the pink and yellow filling into the cooled crust. Use a knife or skewer to gently swirl the colors together to create a marbled effect. Do not over-mix.
  7. Bake for 35 to 40 minutes, or until the center is mostly set but still slightly jiggly. Cool completely on a wire rack before refrigerating for at least 4 hours, or until firm, before slicing and serving.

Notes

You can use different food coloring combinations based on your preference. Chill the pie thoroughly before cutting for clean slices.
