- In a bowl, combine chicken pieces with soy sauce and sesame oil. Let it marinate for at least 10 minutes.
- Heat a wok or large skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.
- Add minced garlic and grated ginger to the wok and stir-fry for 30 seconds until fragrant.
- Add broccoli florets, sliced bell pepper, snap peas, and sliced onion to the wok. Stir-fry for another 5-7 minutes, or until vegetables are tender-crisp.
- Serve immediately. Garnish with sesame seeds and chopped green onions if desired.
Notes
You can substitute chicken with shrimp or tofu. Feel free to add other low-carb vegetables like mushrooms, zucchini, or cauliflower.
