Ingredients
  

For the Salad
  • 2 large cucumbers thinly sliced
For the Dressing
  • 3 tablespoons peanut butter creamy
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1/2 teaspoon chili garlic sauce or to taste
  • 1 clove garlic minced
  • 2 tablespoons water or more, to thin

Method
 

  1. Prepare the salad: Thinly slice the cucumbers and place them in a serving bowl.
  2. Make the dressing: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, chili garlic sauce, and minced garlic.
  3. Thin the dressing with water, one tablespoon at a time, until it reaches your desired consistency.
  4. Pour the dressing over the sliced cucumbers and toss to coat evenly.
  5. Serve immediately or chill for later.

Notes

For a garnish, you can add chopped peanuts, cilantro, or sesame seeds.
