Cucumber Salad Sandwiches

Ingredients
  

For the Sandwich
  • 8 slices Bread
For the Cucumber Salad
  • 1 large Cucumber peeled, seeded, and thinly sliced
  • 1/4 cup Mayonnaise
  • 1 tablespoon Fresh dill chopped
  • 1 teaspoon Lemon juice
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

Method
 

  1. In a bowl, combine the sliced cucumber, mayonnaise, dill, lemon juice, salt, and pepper. Stir gently to coat the cucumber.
  2. Spread the cucumber salad mixture evenly onto four slices of bread.
  3. Top with the remaining four slices of bread.
  4. Cut the sandwiches in half, if desired, and serve immediately.

Notes

For a creamier salad, you can add a tablespoon of sour cream to the mixture. You can also add finely chopped red onion for extra flavor.
