Ingredients
  

For the Salad
  • 2 large cucumbers peeled, seeded, and thinly sliced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh dill chopped
For the Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the sliced cucumbers, red onion, and chopped dill.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, sugar, salt, and pepper until well combined.
  3. Pour the vinaigrette over the cucumber mixture and toss gently to coat.
  4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

Notes

You can add other vegetables like bell peppers or tomatoes if desired. Serve chilled.
