- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the mashed sweet potato, cooked lentils, rolled oats, cilantro, minced garlic, cumin, smoked paprika, salt, and pepper. Use a fork or your hands to mix everything together until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty, about 3/4 inch thick.
- Heat the olive oil in a large skillet over medium-high heat. Carefully place the patties in the hot skillet and cook for 3-4 minutes per side, until golden brown and slightly crispy.
- Alternatively, you can bake the patties. Place the shaped patties on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and firm.
- Serve the patties warm.
Notes
These patties are delicious served on their own, in a bun as a burger, or crumbled over a salad. They can be made ahead of time and reheated.
