Crispy Cheddar Corn Potato

Ingredients
  

  • 1.5 lbs potatoes cut into 1-inch cubes
  • 1 cup corn kernels fresh or frozen
  • 1 cup cheddar cheese shredded
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 20 minutes, then add the corn kernels to the baking sheet and toss with the potatoes.
  5. Continue roasting for another 10 minutes, or until the potatoes are tender and crispy.
  6. Remove from the oven and sprinkle the shredded cheddar cheese over the top. Let it melt for a minute or two before serving.

Notes

You can add other seasonings like garlic powder or paprika for extra flavor. Serve immediately.
