Course: Appetizer
Cuisine: American

Ingredients

For the Eggs
  • 6 large eggs
For the Filling
  • 1/4 cup mayonnaise
  • 1 tsp dijon mustard
  • 1/2 tsp white vinegar
  • salt to taste salt
  • black pepper to taste black pepper
For Decoration
  • 1 tbsp black olives finely chopped, for "eyes"
  • 1 tbsp pimento optional, for "mouth"

Equipment

  • Saucepan
  • Mixing bowl
  • Piping bag
  • Star tip

Method

  1. Place eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil over high heat, then reduce heat to low and simmer for 10 minutes.
  2. Drain the hot water and immediately fill the pan with ice water. Let the eggs cool for at least 10 minutes.
  3. Peel the cooled eggs and slice them in half lengthwise. Scoop out the yolks into a mixing bowl.
  4. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the egg yolks. Mash with a fork until smooth. You can also use a hand mixer for a creamier texture.
  5. Transfer the yolk mixture to a piping bag fitted with a star tip. Pipe the filling back into the egg white halves.
  6. Decorate the deviled eggs to look like spooky faces. Use chopped black olives for eyes and pimento for a mouth, if desired.
  7. Arrange the deviled eggs on a serving platter and serve chilled.

Notes

You can add a pinch of paprika for color or a dash of hot sauce for a little heat to the yolk mixture.
