Creamed Spinach Steakhouse Style

This recipe makes a rich, creamy spinach side dish similar to what you might find in a steakhouse.

Ingredients
  

For the Creamed Spinach
  • 1 lb fresh spinach Washed and dried
  • 2 tablespoons butter
  • 2 cloves garlic Minced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese Freshly grated
  • 1/4 teaspoon nutmeg Ground
  • 1/2 teaspoon Kosher salt Or to taste
  • 1/4 teaspoon black pepper Freshly ground

Method
 

  1. Melt the butter in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Do not let the garlic brown.
  2. Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
  3. Slowly pour in the heavy cream while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer.
  4. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Continue to cook until the sauce thickens slightly, about 3 to 5 minutes.
  5. Add the spinach to the skillet in batches. Stir until all the spinach has wilted down into the cream sauce. This may take a few minutes.
  6. Taste the creamed spinach and adjust salt and pepper if needed. Serve immediately as a side dish.

Notes

If you prefer a tangier flavor, you can add a splash of white wine or a teaspoon of Dijon mustard to the cream sauce before adding the spinach.
