- Melt the butter in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Do not let the garlic brown.
- Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
- Slowly pour in the heavy cream while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer.
- Stir in the Parmesan cheese, nutmeg, salt, and pepper. Continue to cook until the sauce thickens slightly, about 3 to 5 minutes.
- Add the spinach to the skillet in batches. Stir until all the spinach has wilted down into the cream sauce. This may take a few minutes.
- Taste the creamed spinach and adjust salt and pepper if needed. Serve immediately as a side dish.
Notes
If you prefer a tangier flavor, you can add a splash of white wine or a teaspoon of Dijon mustard to the cream sauce before adding the spinach.
