- Make the cranberry sauce: Combine cranberries, sugar, and orange juice in a small saucepan. Cook over medium heat, stirring occasionally, until cranberries burst and sauce thickens, about 8-10 minutes. Let cool.
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
- Unfold the puff pastry sheet on a lightly floured surface. Cut into 12 equal squares.
- Press each puff pastry square into a cup of the mini muffin tin, creating a small pocket.
- Place one piece of brie into each puff pastry cup.
- Top the brie with about 1 teaspoon of the cooled cranberry sauce.
- Brush the exposed edges of the puff pastry with the beaten egg wash.
- Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed.
- Let cool slightly in the muffin tin before carefully removing. Serve warm.
Notes
You can make the cranberry sauce a day in advance. If you don't have a mini muffin tin, you can bake these on a parchment-lined baking sheet, though they may spread more.
