Cranberry Brie Bites

These easy cranberry brie bites are a perfect appetizer for any holiday gathering. They combine the creamy richness of brie with the tartness of cranberry sauce, all baked in a flaky puff pastry.

Ingredients
  

For the Cranberry Sauce
  • 1 cup fresh or frozen cranberries
  • 1/4 cup granulated sugar
  • 2 tablespoons orange juice
For the Bites
  • 1 sheet puff pastry thawed
  • 4 ounces brie cheese rind removed, cut into 12 pieces

  • Mini muffin tin
  • Small saucepan

Method
 

  1. Make the cranberry sauce: Combine cranberries, sugar, and orange juice in a small saucepan. Cook over medium heat, stirring occasionally, until cranberries burst and sauce thickens, about 8-10 minutes. Let cool.
  2. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin.
  3. Unfold the puff pastry sheet on a lightly floured surface. Cut into 12 equal squares.
  4. Press each puff pastry square into a cup of the mini muffin tin, creating a small pocket.
  5. Place one piece of brie into each puff pastry cup.
  6. Top the brie with about 1 teaspoon of the cooled cranberry sauce.
  7. Brush the exposed edges of the puff pastry with the beaten egg wash.
  8. Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed.
  9. Let cool slightly in the muffin tin before carefully removing. Serve warm.

Notes

You can make the cranberry sauce a day in advance. If you don't have a mini muffin tin, you can bake these on a parchment-lined baking sheet, though they may spread more.
