Ingredients
  

For the Crust
  • 1 pre-made pie crust pie crust refrigerated
For the Filling
  • 2 cups cottage cheese low-fat
  • 3 large eggs
  • 1 cup shredded zucchini peeled and squeezed dry
  • 1/2 cup chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Press the pie crust into a 9-inch pie plate.
  3. In a large bowl, combine the cottage cheese, eggs, shredded zucchini, chopped onion, Parmesan cheese, salt, and pepper. Mix well.
  4. Pour the filling into the prepared pie crust.
  5. Bake for 35-40 minutes, or until the center is set and the top is lightly golden.
  6. Let the quiche cool for a few minutes before slicing and serving.

Notes

You can add other vegetables like spinach or bell peppers. For a richer flavor, use full-fat cottage cheese.
