- Preheat your oven to 375°F (190°C).
- Press the pie crust into a 9-inch pie plate.
- In a large bowl, combine the cottage cheese, eggs, shredded zucchini, chopped onion, Parmesan cheese, salt, and pepper. Mix well.
- Pour the filling into the prepared pie crust.
- Bake for 35-40 minutes, or until the center is set and the top is lightly golden.
- Let the quiche cool for a few minutes before slicing and serving.
Notes
You can add other vegetables like spinach or bell peppers. For a richer flavor, use full-fat cottage cheese.
